  1. Preheat oven to 350°F.
  2. Add pumpkin purée, egg, egg whites, water, and brown sugar substitute to a bowl and mix until smooth.
  3. Add oat flour, all-purpose flour, protein powder, PBfit Pumpkin Spice, granulated sugar substitute, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt.
  4. Mix until just combined. Batter should be thick and spreadable, not pourable.
  5. Divide between 2 mini loaf pans/protein bricks or add to one standard loaf pan.
  6. Bake the 2 smaller loaves for about 25–32 minutes or one larger loaf for about 35–42 minutes.
  7. Remove once the center is just set and a toothpick comes out mostly clean with a few moist crumbs.
  8. Let cool completely.
  9. Mix Greek yogurt, pudding mix, and powdered sugar substitute. Add just enough water or almond milk to make it thick and spreadable.
  10. Frost and either enjoy as 2 protein bricks or cut into 8 slices.
