Cheesy BBQ Chicken & Potatoes

Ingredients (raw weights)
- 1500 g chicken breast, boneless skinless, raw
- 18 g salt, dry
- 4 g oregano, dried, dry
- 6.8 g chili powder, dry
- 12 g paprika, dry
- 16 g garlic powder, dry
- 7.6 g fresh parsley, chopped, raw
- 27 g olive oil, as sold
- 1500 g potatoes, white, raw
- 250 g onion, raw
- 90 g garlic, raw
- 4 g spicy italian herb seasoning, dry
- 9.2 g paprika, dry
- 9.6 g onion powder, dry
- 250 g BBQ sauce, sugar free, as sold
- 120 g cheddar/colby cheese, low fat shredded, as sold
- 120 g mozzarella/pizza cheese, light shredded, as sold
Steps
- Slice chicken breast into small cubes. Add all the seasonings with chopped parsley and olive oil. Mix well until the colour changes, set aside
- Line a large sheet pan with parchment paper, add cubed potatoes, chopped red onion, chopped garlic cloves, extra seasoning and go heavy with cooking spray. Mix until well coated!
- Oven roast for 20 mins at 200C/400F until slightly crispy golden. Now spread marinated chicken evenly over the potatoes. Add cooking spray, then back in oven for 25 mins until golden and juicy.
- Once cooked, while the pan is still hot, add BBQ sauce, cheddar and mozzarella then mix and fold gently until melted and cheesy.
- Garnish then divide into 8 equal portions and ENJOY!
