Easy & Healthy High Protein Oreo Crumbl Cookies

Ingredients (raw weights)
- 35 g all-purpose flour, dry
- 4.6 g baking powder, dry
- 40 g all-purpose flour, dry
- 3 g salt, dry
- 40 g cocoa powder, unsweetened, dry
- 50 g zero-calorie sweetener (erythritol/stevia/monk fruit)
- 32 g casein protein powder, dry
- 4.2 g vanilla extract, as sold
- 180 g Greek yogurt, plain, low fat 2%, as sold
- 120 g pumpkin puree, canned
- 50 g egg, whole, raw
- 52 g milk, skim, as sold
- 180 g high protein yogurt, fat free, as sold
- 11 g Oreo-style chocolate sandwich cookies, as sold
- 40 g whipped topping, light (frozen)
Steps
- In a bowl add plain flour, baking powder, coconut flour, salt, cocoa powder, zero calorie sweetener, a whey casein blend protein powder & mix
- (using a whey casein blend is very important to ensure it cooks properly & doesn’t turn out dry)
- Now add vanilla extract, low fat greek yoghurt, pumpkin puree, 1 egg & mix well. Slowly add drops of milk while mixing until the texture is thick like shown in the video.
- Slightly wet your hands & form 4 equal cookies, place them on a baking tray with baking paper & oven bake at 175C/350F for 18 - 22 minutes.
- To make the oreo frosting in a bowl mix together vanilla yoghurt, sugar free pudding mix, crushed oreo & light whipped cream until you reach the perfect frosting texture.
- Let the cookies cool down completely before equally distributing the frosting across all 4 cookies, sprinkle crushed Oreo on top of each one & enjoy! Store in the fridge.
