Easy High Protein Honey BBQ Chicken Mac & Cheese

Ingredients (raw weights)
- 700 g chicken breast, boneless skinless, raw
- 3.1 g garlic powder, dry
- 4.5 g olive oil, as sold
- 25 g honey, as sold
- 85 g BBQ sauce, sugar free, as sold
- 320 g pasta, dry (uncooked)
- 364 g evaporated milk, fat free, canned
- 80 g cream cheese, light (low fat), as sold
- 3 g chicken stock powder / bouillon, dry
- 100 g cheddar/colby cheese, low fat shredded, as sold
Steps
- Season diced chicken with salt, onion powder, smoked paprika & garlic powder, add olive oil & mix well.
- Cook chicken on medium to high heat for around 4 minutes each side or until fully cooked. Remove from heat then add honey & BBQ sauce.
- Mix until the chicken is evenly coated in the sauce.
- Cook macaroni in boiling water according to packet instructions.
- While pasta cooks, add evaporated milk, light cream cheese, chicken stock powder & grated cheese to a pan on medium heat, stir until smooth & creamy.
- Add drained pasta into the cheese sauce & mix until fully coated.
- Divide the Honey BBQ Chicken & Mac & Cheese evenly into 4 meal prep servings.
- Add a splash of milk before reheating to keep the mac & cheese creamy & mix through well.
