- 680 g chicken thigh, boneless skinless, raw
- 4.5 g olive oil, as sold
- 14 g garlic powder, dry
- 6.8 g paprika, dry
- 3 g oregano, dried, dry
- 0.7 g chili powder, dry
- 14 g baking powder, dry
- 0.5 g salt, dry
- 122 g Greek yogurt, plain, nonfat, as sold
- 30 g mayonnaise, light, as sold
- 30 g green onion/scallion, raw
- 10 g handfuls fresh cilantro, raw
- 7.5 g jalapeño, raw
- 10 g lime juice, as sold
- 1.1 g chipotle powder, dry
- 0.5 g salt, dry
- 400 g cucumber (mini/Persian), raw
- 30 g onion, raw
- 7.6 g cilantro, raw
- 4.5 g olive oil, as sold
- 10 g lemon juice, as sold
- 0.5 g salt, dry
- 100 g Kaizen lupin low-carb pasta, dry

Steps
- Preheat the oven to 400F and toss the chicken with oil, the spices, salt, pepper and baking powder.
- Roast skin-side up for 40 minutes until crisp (remove skin after if preferred).
- Blend the yogurt, mayo, scallions, cilantro, jalapeno, lime, chipotle and salt into a smooth sauce.
- Toss the sliced cucumbers, red onion and cilantro with olive oil, lemon juice and salt.
- Cook the rice per the package.
- Assemble bowls with rice, chicken, cucumber salad, avocado and a drizzle of sauce.
