Healthy High Protein Pepperoni Pizza

Ingredients (raw weights)
- 250 g cottage cheese, 1% low fat, as sold
- 10 g dry yeast
- 52 g milk, skim, as sold
- 20 g all-purpose flour, dry
- 35 g all-purpose flour, dry
- 1 g italian herb seasoning, dry
- 6 g salt, dry
- 3.1 g garlic powder, dry
- 100 g egg, whole, raw
- 5 g parmesan cheese, grated, as sold
- 120 g pizza sauce, as sold
- 30 g mozzarella/pizza cheese, light shredded, as sold
- 80 g cheddar/colby cheese, low fat shredded, as sold
- 40 g pepperoni, sliced, cooked
Steps
- In a blender cup, add low-fat cottage cheese, nutritional yeast, a little bit of milk, and blend until smooth.
- Add coconut flour, plain flour, the seasonings, and two eggs to the blender and mix well to combine.
- Spray baking paper with cooking oil.
- Spread the wet mixture on the baking paper as big and thin as possible to create a round pizza base.
- Bake the pizza base in the oven until golden brown.
- Spread pizza sauce over the baked base.
- Top with Parmesan cheese, low-fat mozzarella, low-fat cheddar, and pepperoni slices.
- Bake again until the cheese is melted.
