High-Protein Beef Hot Pot

Ingredients (raw weights)
- 800 g beef top sirloin steak, lean, raw
- 14 g oil, as sold
- 25 g butter, salted, as sold
- 150 g onion, raw
- 280 g carrot, raw
- 20 g cornstarch, dry
- 200 g wine (table, red/white), as sold
- 500 g beef broth/stock, as sold
- 2 g thyme, fresh, as sold
- 800 g potatoes, white, raw
- 0.5 g black pepper, dry
Steps
- Preheat the oven to 170C (150C fan).
- Season the beef and brown it in batches in a hot casserole with the oil and 10 g butter, then set aside.
- Cook the onion in another 10 g butter for 2-3 minutes, then add the carrots for a minute.
- Stir in the cornflour for 2 minutes, then gradually add the wine until smooth and slightly thick.
- Return the beef, add the stock and thyme, season and bring to the boil.
- Layer the potato slices on top and dot with the remaining butter.
- Cover and bake for 1 hour.
- Uncover, raise the oven to 200C (180C fan) and bake 25-30 minutes more until the potatoes are golden.
