High Protein Broccoli Feta Bean Soup

Ingredients (raw weights)
- 440 g broccoli, raw
- 60 g spinach, raw
- 105 g onion, raw
- 16 g garlic, raw
- 170 g feta cheese, reduced fat, as sold
- 20 g olive oil, as sold
- 747 g chicken broth/stock, as sold
- 72 g cottage cheese, fat free, as sold
- 240 g kidney beans, canned, drained
- 3 g oregano, dried, dry
- 2.7 g chili powder, dry
- 0.5 g salt, dry
Steps
- 1⃣ Preheat oven to 400°F.
- 2⃣ Cut broccoli into smaller pieces so they cook faster + roast evenly, super important!
- 3⃣ Toss the broccoli into an oven safe dish along with your quartered onion, garlic, and feta. Drizzle with olive oil, add oregano, chili flakes, salt & pepper. Roast for 35-40 mins. Time varies by oven, so keep an eye on it!
- 4⃣ Once roasted, add everything to a blender with the cottage cheese, bone broth, baby spinach, lemon zest + juice, and beans. Blend until smooth. Add water if too thick.
- 5⃣ Warm it up, add to a bowl and garnish with fresh dill, chili flakes, and finely shredded manchego or parmesan to bring out the flavors.
