High Protein Cheesy Egg & Beef Breakfast Rolls

Ingredients (raw weights)
- 1100 g ground beef 95/5, raw
- 400 g salsa, as sold
- 60 g cream cheese, light (low fat), as sold
- 25 g butter, light, as sold
- 264 g egg whites, raw (liquid)
- 180 g cheddar/colby cheese, low fat shredded, as sold
- 521 g low carb / high fiber tortilla, as sold
Steps
- Cook the extra lean beef mince with the seasonings listed.
- Once nearly cooked, add salsa and light cream cheese, mix well to combine and set aside once cooked.
- In a pan on low to medium heat, add light butter and mixed eggs, stirring and folding gently until cooked.
- Add light grated cheddar to the eggs and continue mixing until cheesy.
- Grab a warm tortilla and evenly distribute both fillings across it.
- Roll the tortilla tightly and repeat the process for the other 11 rolls.
- Spray the rolls with light cooking oil spray and air fry or oven bake until golden brown and crispy.
