High Protein Chicken Bacon Ranch Mac & Cheese

Ingredients (raw weights)
- 700 g chicken breast, boneless skinless, raw
- 80 g BBQ sauce, sugar free, as sold
- 320 g pasta, dry (uncooked)
- 428 g evaporated milk, fat free, canned
- 4.6 g ranch seasoning & 1.5 tsp smoked paprika, dry
- 100 g cream cheese, light (low fat), as sold
- 100 g cheddar/colby cheese, low fat shredded, as sold
- 100 g turkey bacon, raw
- 250 g Greek yogurt, plain, low fat 2%, as sold
- 120 g mayonnaise, light, as sold
- 120 g butter, light, as sold
- 3.8 g fresh dill, raw
- 3.8 g fresh chives, raw
- 3.1 g garlic powder, dry
- 0.5 g salt, dry
- 10 g lemon juice, as sold
Steps
- To make the ranch sauce, add all of the ingredients listed in the caption into a bowl, mix it, and set it in the fridge.
- Grab the diced chicken breast, add ranch seasoning and smoked paprika, and mix it well.
- Cook the chicken on medium to high heat for four minutes on each side.
- Once cooked, add a little bit of low sugar barbecue sauce, mix it well, and set it aside.
- Start cooking the pasta according to package instructions.
- In the same pan, add fat free evaporated milk, more ranch seasoning, smoked paprika, and light cream cheese, and mix until melted.
- Once melted, add low fat grated cheddar cheese and keep mixing until smooth and creamy.
- Add the cooked and drained pasta along with the cooked and diced bacon bits, and mix well.
- Divide the chicken and mac and cheese into four equal servings, topping each with 30 grams of ranch sauce, and enjoy.
