High Protein Crispy Honey Garlic Chicken Fried Rice

Ingredients (raw weights)
- 1050 g chicken breast, boneless skinless, raw
- 38 g soy sauce, reduced sodium, as sold
- 8 g garlic, raw
- 1.1 g black pepper, dry
- 3.1 g garlic powder, dry
- 40 g potato starch, dry
- 500 g chicken stock powder / bouillon, dry
- 132 g egg whites, raw (liquid)
- 30 g green onion/scallion, raw
- 980 g white rice, cooked
- 44 g soy sauce, reduced sodium, as sold
- 20 g green onion/scallion, raw
- 20 g garlic, raw
- 66 g soy sauce, reduced sodium, as sold
- 100 g ketchup, no sugar added, as sold
- 25 g vinegar, as sold
- 4.9 g cornstarch, dry
- 80 g honey, as sold
Steps
- Add salt reduced soy sauce to the chicken with garlic, black pepper, and onion powder, then mix it well.
- Add the chicken to a Ziploc bag with some potato starch and mix it well until the chicken is fully coated.
- Spray the coated chicken with light cooking oil and air fry until golden and crispy.
- In a pan on medium heat, add frozen mixed vegetables followed by the mixed eggs and let it cook through, mixing well.
- Add the white part of the spring onion followed by the day old cooked white rice.
- Add a little bit of soy sauce and mix well.
- Add the green part of the spring onion and mix well to combine.
- For the honey garlic sauce, in a pan on medium heat, add garlic, equal parts water and soy sauce, reduced sugar ketchup, rice vinegar, and cornflour mixed with water to help it thicken.
- Take the sauce off the heat and add honey, mixing once more.
- Coat the chicken in the honey garlic sauce.
- Divide everything into seven equal servings and enjoy.
