High Protein Crispy Hot Honey Chicken Mac & Cheese

Ingredients (raw weights)
- 700 g chicken breast, boneless skinless, raw
- 6 g salt, dry
- 1.2 g onion powder, dry
- 1.6 g garlic powder, dry
- 1.4 g chili powder, dry
- 2.3 g paprika, dry
- 50 g egg, whole, raw
- 120 g cornstarch, dry
- 10 g butter, light, as sold
- 105 g hot sauce, as sold
- 50 g honey, as sold
- 0.5 g chili powder, dry
- 321 g evaporated milk, fat free, canned
- 2.3 g paprika, dry
- 2 g chicken stock powder / bouillon, dry
- 80 g cream cheese, light (low fat), as sold
- 100 g cheddar/colby cheese, low fat shredded, as sold
- 320 g pasta, dry (uncooked)
Steps
- Season the diced chicken, add the egg and mix until evenly coated. Toss through the cornflour until every piece is well coated.
- Arrange the chicken on a lined tray, spray with light cooking oil and air fry until crispy, flipping and spraying again halfway through.
- While the chicken cooks, melt the butter in a pan, then add the hot sauce, honey and cayenne pepper. Stir until combined.
- Toss the cooked chicken through the hot honey sauce until evenly coated.
- In a separate pan, combine the evaporated milk, smoked paprika, chicken stock powder, light cream cheese and grated cheddar. Stir over low heat until smooth and creamy.
- Cook the macaroni according to the packet instructions, then drain well.
- Add the cooked pasta to the cheese sauce and mix until fully coated.
- Divide the hot honey chicken and mac & cheese evenly into 4 meal prep servings.
