High Protein Loaded Biscoff Cookies

Ingredients (raw weights)
- 35 g protein pasta, dry
- 4.6 g baking powder, dry
- 25 g all-purpose flour, dry
- 50 g zero-calorie sweetener (erythritol/stevia/monk fruit)
- 32 g casein protein powder, dry
- 10 g powdered peanut butter, dry
- 50 g egg, whole, raw
- 4.2 g vanilla extract, as sold
- 170 g high protein yogurt, fat free, as sold
- 103 g milk, skim, as sold
- 7.8 g Lotus Biscoff cookies, as sold
- 120 g pumpkin puree, canned
- 200 g high protein yogurt, fat free, as sold
- 50 g whipped topping, light (frozen)
- 7.8 g Lotus Biscoff cookies, as sold
- 50 g Biscoff cookie butter spread, as sold
Steps
- In a bowl add plain flour, coconut flour, sweetener, protein powder, powdered peanut butter & mix well to avoid clumping.
- Now add a whisked egg, vanilla or cookie butter extract, flavoured yoghurt & mix well.
- Slowly add skim milk while mixing until you have a thick, cookie batter like consistency.
- Add a biscoff biscuit with pumpkin pure & mix once more.
- Wet your hands & equally form 4 cookies then place them on a lightly greased baking tray lined with baking paper.
- Oven bake at 175C/350F for 13 - 16 Minutes then let them cool for 10 minutes.
- To make the frosting in a bowl mix together flavoured yoghurt, light whipped cream & sugar free icing powder. Set in the fridge to slightly thicken.
- Equally spread the frosting across each cookie then top with a crushed biscoff biscuit & drizzle melted biscoff spread across the cookies & enjoy.
