High Protein Meal Prep McGriddles

Ingredients (raw weights)
- 250 g all-purpose flour, dry
- 4.6 g baking powder, dry
- 2.6 g cinnamon, dry
- 35 g zero-calorie sweetener (erythritol/stevia/monk fruit)
- 50 g egg, whole, raw
- 345 g milk, 1% low fat, as sold
- 600 g ground beef 95/5, raw
- 6 g salt, dry
- 2.4 g onion powder, dry
- 3.1 g garlic powder, dry
- 0.3 g sage, dried, dry
- 0.5 g thyme, dried, dry
- 300 g egg, whole, raw
- 4.7 g cottage cheese, fat free, as sold
- 150 g cheddar/colby cheese, low fat shredded, as sold
Steps
- In a bowl add all purpose flour, baking powder, cinnamon, zero calorie sweetener & mix well.
- Add an egg, low fat milk & mix well until you have a thick pancake batter (add more milk if needed)
- Spray a pan with light cooking oil spray, evenly distribute the batter into two seperate silicone egg rings with some a drizzle of sugar free maple syrup on top. Place a lid on the pan & cook for 3 - 5 minutes on medium heat or until you see bubbles at the top then flip & cook again. Repeat this process until you have 12 pancakes.
- In a seperate bowl add extra lean beef mince with the seasonings, mix well & form 6 equal balls.
- To a pan add the mince ball, flatten & cook on medium - high heat for 2 minutes on each side.
- In a seperate bowl mix together 6 eggs with blended cottage cheese (this step boosts the protein & also makes the eggs fluffier)
- To a small pan add a thin layer of the egg mixture, once it’s cooked fold the edges towards the middle to create an egg pocket. Repeat the process to make 6 egg pockets in total.
- Assemble each McGriddle by adding a slice of cheddar cheese on one pancake followed by a mince patty, one egg pocket & another pancake on top.
