Low Calorie, High Protein Giant Brownie Pudding

Ingredients (raw weights)
- 100 g egg, whole, raw
- 120 g egg whites, raw (liquid)
- 20 g butter, light, as sold
- 75 g Greek yogurt, plain, nonfat, as sold
- 30 g oat flour (blended oats), dry
- 5.4 g cocoa powder, unsweetened, dry
- 275 g zero-calorie sweetener (erythritol/stevia/monk fruit)
- 1 g salt, dry
- 28 g dark chocolate 70-85%, as sold

Steps
- Preheat oven to 325°F and grease an 8x8 baking dish.
- Add eggs, egg whites, sweetener, and vanilla to a bowl. Beat until pale, thick, and fluffy.
- Mix in Greek yogurt.
- Add oat flour, cocoa powder, and salt. Fold together until just combined.
- Fold in melted light butter. If using the optional chocolate, melt it with the butter first.
- Pour into baking dish and bake for 25–30 minutes, until the top is set but the center is still soft and gooey.
- Let cool for 5–10 minutes, then dig in while warm.
