Massive Low Calorie Protein Chocolate Chunk Pizza Cookie

Ingredients (raw weights)
- 35 g butter, light, as sold
- 30 g apple, raw
- 30 g sugar, granulated, dry
- 50 g egg, whole, raw
- 4.4 g vanilla extract, as sold
- 45 g all-purpose flour, dry
- 25 g casein protein powder, dry
- 10 g oat flour (blended oats), dry
- 4 g baking soda, dry
- 0.5 g salt, dry
- 96 g zero-calorie sweetener (erythritol/stevia/monk fruit)
- 15 g semisweet chocolate chips, as sold
Steps
- Preheat oven to 350°F (175°C) and lightly grease an 8-inch skillet.
- Mix the softened butter, applesauce, syrup, egg, and vanilla until combined.
- Add flour, casein, oat flour, baking soda, salt, and sweetener. Mix into a thick cookie dough.
- Fold in 15g chocolate chips and press evenly into the skillet. Add extra chocolate on top if desired.
- Bake for 12–16 minutes, until the edges are golden and set but the center is still slightly soft.
- Let cool for 5–10 minutes so the outside sets while the center stays thick and gooey.
