Steps
- Spray some light cooking oil on a lime baking tray.
- Add diced potatoes, diced bell peppers, diced onion, salt, garlic powder, and paprika to the tray, mix well, and cook until softened.
- Add extra lean beef mince to the tray along with the seasonings listed in the caption.
- Mix the beef and spread it evenly in small pieces along the tray, then add diced bacon on top.
- Blend the eggs together with cottage cheese and corn flour until fluffy, then pour the mixture evenly in the tray.
- Bake in the oven until firm.
- Add light grated cheddar on top and bake again until golden brown and crispy.
- Cut into 10 even slices.
- Place each slice on a warm tortilla with some nacho cheese sauce.
- Fold, toast, wrap, and store in the freezer for later reheating.
