Sweet & Spicy Korean Chicken

Ingredients (raw weights)
- 4.5 g oil, as sold
- 500 g chicken breast, boneless skinless, raw
- 33 g soy sauce, reduced sodium, as sold
- 150 g onion, raw
- 150 g bell pepper, raw
- 150 g bell pepper, raw
- 15 g garlic, raw
- 15 g ginger root, raw
- 330 g diet soda (0 kcal), as sold
- 15 g vinegar, as sold
- 20 g gochujang paste, as sold
Steps
- Stir-fry the chicken with the soy sauce in a very hot oiled wok until coloured, then remove.
- Fry the onion and peppers on high heat until softened and lightly charred.
- Add the garlic and ginger for about 30 seconds.
- Pour in the Diet Coke, rice vinegar and gochujang, then return the chicken.
- Simmer on high for about 10 minutes until the sauce is thick and sticky.
- Serve topped with sesame seeds and spring onions.
